Peel the cauliflower, separate in bunches, wash and cook in a large pot of boiling salted water to which you add, when boiling, 1 tablespoon of flour dissolved in a little cold water. Melt the butter in a high-sided frying pan, add the paprika and the cream, salt, pepper. Reduce by a third. Arrange the well drained cauliflower bunches on the hot serving dish, coat with the very hot sauce and serve immediately.
